Swimming Upstream

That's what I feel like I'm doing! So much to do, and want to do, so little time! I took one of my tests today and it wasn't too bad. The worst one, pharmacology is on Friday. So basically, until I'm done with pharm I will continue to feel like a salmon. :-) So, I give you salmon croquettes. I made these SO long ago and don't think I've posted them. If I have, please forgive me! These are a childhood favorite and one of the few things that I eat with ketchup. Somehow, the "mushy" inside with the crispy outside is pleasing. Along with them, I give you a simple salad (from another meal) that is oh so spring and oh so refreshing. With omega-3's in the fist and anti-oxidants in the salad, this is the perfect meal for Sweetnick's ARF-5-A-Day Tuesday. Head on over and check out the other recipes.
Salmon Croquettes
1 15 oz can salmon (2T juice saved)
1 egg
1/3 cup mined onion
1/2 cup flour
1 1/2 teaspoons baking powder

Clean salmon (making sure all bones are removed). Mix with the egg and onion. Stir in flour. Add the baking powder to the reserved juice. Stir this into the fish mixture. Heat a skillet and either spray with cooking spray or drizzle some olive oil in the bottom. "Fry" the croquettes until they are browned. Enjoy.

Strawberry, Feta, and Romaine with Balsamic Vinegarette Salad
Fresh romaine lettuce
Strawberries
feta cheese
balsamic (or your favorite kind) vinegarette

Clean and cut lettuce and strawberries. Toss in a bowl with the feta cheese. Serve with dressing and enjoy.

Swimming upstream - I like the analogy and totally feel it. Mine is always - riding on an out-of-control carousel that doesn't stop. ;)

Hey claire, those salmon croquettes look yummm and easy. Just wondering, does canned salmon have bones?... now i feel dumb.haha.

Peabody - Thanks...I'm almost through this week.

Kristen - Believe me, there are times I DO feel overwhelmed. The only way I get through is the strength of God in me!

Victoria - Don't feel dumb. SOMETIMES there are bones that just sneak their way in there. Usually it's just some cartilage (that can be eaten) but I like to get all of that and the nasty looking gray stuff out of there! :-)

For whatever reason, now I have Dory from "Finding Nemo" stuck in my head, saying "swimming, swimming, just keep swimming" :)

These look great Claire! You know, it's funny how your taste changes. My mom loved salmon croquettes and made them a lot when I was growing up. I didn't like them then, but I do now. I have a recipe I make (adapted from Eating well magazine) and they're good. There's a creamy dill sauce to go with them and I really like both of them. Yum-o!

That salad looks good too! Love your pictures :)

Stacy - I LOVE that movie. My favorite part is when Dorie talks to the whales! My mom wants the dill sauce recipe...she thought that sounded really good.

I love salmon cakes such as these....a little bread crumbs on the outside would amp up that crunchy factor too!

Jancd - I SO glad that you're enjoying the rose pie...it's so versatile and easy but delicious.

Erika - It's getting there...except that after this week I have nothing but STUDYING for a month until the biggest test of my life thus far...must pass to continue training. No pressure! :-)

VC - The canned stuff isn't bad either - I was going to get some this week but prices have gone up, so I'm waiting. Think I'll use up some frozen ground turkey from my freezer.
