We All Scream...

"...Noooooo, get your own!" That was my brother's reaction when Daddy tried to take a bite of his ice-cream, chocolate chip cookie sandwich. In the midst of studying for my Step 1 exam, I came home for Mother's day. I really do enjoy coming home. There's just something comfortable about being with family, and I do LOVE mine! It'll be fun when I have my own.
Anyway, Philip had apparently asked Mama to get some ice cream sandwiches at the store and she couldn't find the kind he had requested. Light bulb! "Do you want me to make some chocolate chip cookies for ice cream sandwiches?" "Mmm." (That means yes!) So, I went in search of a recipe to use. The normal recipe I use for chocolate chip cookies is definitely not for sandwiches. The one I finally decided on was from The Joy of Cooking. It is not one I would use for just a normal cookie as it i too flat for my taste. HOWEVER, it is the perfect ice cream sandwich cookie - flat but not so crispy that it breaks. When Philip saw them he said, "Oooh, they look like the M&M kind. I suppose that's good! So, put a grin on someone's face and make a cookie...you might even make them scream! Chocolate Chip Drop Cookies from The Joy of Cooking
1/2 cup butter
1/2 cup brown sugar
1/2 cup white sugar
1 egg
1/2 teaspoon vanilla
1 cup plus 2 T sifted AP flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup chocolate chips
1/2 cup nuts, opt (I didn't use)
Preheat oven to 375 degrees F. Cream butter. Add the sugars gradually and beat until creamy. Add the egg and vanilla. Mix dry ingredients together and slowly add to the butter mixture. Stir in chips and nuts. Drop batter on cookie sheet or stone. Bake for 9-10 minutes. Cool for 1 minute on cookie sheet and remove to cooling rack. If making ice cream sandwiches, take a flat, rount cookie bottom-side up and add a scoop of your favorite ice cream. Top with another cookie and enjoy.

What a great sister you are! Those sandwiches look delicious -- and you're right about the cookies, they look perfect for use with ice cream.

My son looks like that whenever he has ice cream. He is very protective of his treats!

Those have got to be the best ice cream sandwiches ever! Looks very good and it's getting to be the perfect time of year for them.

Glenna - My parents laughed when I told them what you said...you pegged him!

Erika - Believe it or not, that's the only one he had. He's funny about dessert...usually has something once and then won't have it again until it's something new.

Alisha - I like making things for him...especially if he'll eat it!

Kate - I think that's the way most guys are!

Gail - You're right...especially in MS. It's not so humid in TN, so outside is actually fairly pleasant.

Paula - I think he liked it but somehow I think he'd prefer the store bought stuff.
