Wednesday Night Snacks
This is the last week for Wednesday night snacks as next week we have our performance. This week I opted for a blondie with chocolate and white chocolate chips. The base I used is actually for a three great tastes blondie (which is better than this one) but I didn't have everything I needed for that. The verdict? "This is absolutely delicious (on her third taste!)." "This isn't good, this is perfect (with a cute little, squinty smile!)!" And finally, from Mama, "What is this? (Leftovers from my treats) Oh, yay. It's for us?"
Blondies
1 cup margarine, melted
2 cups brown sugar
2 eggs
2 teaspoons vanilla
2 cups AP flour
1 teaspoon salt
2/3 cup chocolate chips, white chocolate chips
Pre-heat oven to 350 degrees F. Grease 15X10 jelly roll pan. Stir together sugar and butter. Beat in eggs and vanilla until smooth. Add flour and salt, beating until just blended. Stir in chips. Pour in pan and bake for 25-30 minutes or until wooden pick inserted in center comes out clean. Cool completely in pan on wire rack. Cut into bars.

Mmm blondies - my grandma used to make these, but the white chocolate chip use is new to me!
So, you don't like sweet potatoes? You could probably use butternut squash - do you like that?

Hi Claire, These blondies sound delicious. I love the addition of the white chocolate.
Btw, I am sure you know the health benefits of sweet potatoes-they are a superfood. I can't beleive you don't like them. Have you ever tried them roasted with olive oil and spices? Or baked in the oven just like a white potato topped with butter?
The reason why I ask is because I thought I did'nt like them either-(I had only tried them in sweet potato cassarole topped with marshmallows- too sweet for me!) But now I love them as long as they are cooked as I mentioned.

Crystal - I do like butternut squash and used it in a soup this past winter that I'll probably do again.
Annie - I really wish that I did like sweet potatoes. I can eat about 3-4 bites and then something just doesn't work in my mouth! I have, however, had sweet potato fries (not as good, I know, fried) and those were pretty good. I have a feeling that it will grow on me eventually just as turnip greens and spinach did! BTW, thanks for the link. I'd like to do that on my site, but don't know how. What's the secret?
