A couple of weeks ago, while I was on my psychiatry rotation, we had to round earlier than normal, so I decided to make muffins to take to my team. I searched and finally decided to try a new recipe from the cookbook of the Junior League of Lynchburg, VA:
In Good Company. It's a banana chocolate chip muffin. I don't really go for chocolate chips in muffins but wanted to try the recipe...so it was a great time.
All the guys enjoyed them; in fact, one asked me to give this recipe along with my chocolate chip cookie recipe to his girlfriend. They came out with a nice "crisp", i.e. not mushy or sticky, top and tender inside. I'd recommend them. AND, because of the bananas and even the chocolate, these are a great entry for

Banana Chocolate Chip Muffins 1/2 cup (1 stick) butter or margarine, softened
3/4 cup sugar
2 eggs
1 cup mashed banana (about 2)
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
1 teaspoon salt
3/4 cup chocolate chips
Preheat oven to 350 degrees F. Cream the butter and sugar until fluffy. Add the eggs and mix until smooth. Then mix in the banana and vanilla. Combine the flour, soda, and salt. Stir into the banana mixture. Stir in the chocolate chips but don't overmix. Spoon batter into grease muffin tins. Bake for 25 minutes or until browned.

Gosh, those look so good! I wish I had seen this a couple of hours ago. I just took a loaf of banana bread out of the oven :)
I've made a chocolate and banana loaf before that was good, but not muffins. I definitely need to try this one, I'm sure they all loved them :)
I made a loaf similar to these muffins once. It was really good. They look wonderful.

I am always looking for muffin recipes with crispy tops so I will be saving this one! They look great.
These look like delicious muffins. You're so sweet to bake for others. Much better than hospital cafeteria food!
EMD - I hope you enjoy them whenever you get to make them. I think that mini-chocolate chips might be better than regular sized in these.
Lynn - That is one of my favorite things to do...bake for other people! You're right...homemade stuff is SO much better than the hospital food. I rarely by meals there...I usually take my own food.
