I'm not sure where this recipe is from except that it is in my mom's recipe box. I have been using wheat bran on my yogurt at breakfast and have been meaning to use some to make bran muffins. I finally decided to use it when I realized that I had this recipe. These muffins were VERY good. They are not the typical sweet muffin that you would get in a bakery, but these muffins have a lovely "scent" of maple syrup that makes it just right. These are good to start your day with some fiber or to go along with soup. Just try and enjoy!
Top-Notch Bran Muffins
1 1/4 cups flour
1 cup toasted wheat bran (I didn't see the part about toasting it, so I didn't do it)
1/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1/4 cup maple syrup
1/4 cup oil
1 egg
Raisins (optional, I didn't use)
Preheat oven to 400 degrees F. Combine dry ingredients. Combine wet ingredients. Add wet to dry until moistened. Stir in raisins, is using. Fill muffin cups 2/3 full. Bake 20-22 minutes or until brown. Makes 24 mini-muffins or 12 regular.
VARIATION:
Add 1/4 cup banana and 1/4 cup nuts

Nice healthy recipe...yay. Looks good too.
These look really good. My last muffin attempt was a disaster. I'll blog about it someday.
Claire, thanks for dropping by my blog . . . and leading me to yours.
Nice muffin recipe. I've been experimenting with low sugar and low fat muffins recently. My recipe is so close to being right, but just not quite there. Anyway, I like the maple syrup idea though - might just round out the flavours enough for me.
Peabody - I was glad to see that this didn't have much sugar in it. THe maple flavor is subtle but makes the muffin.
Paula - I really would like to see your last muffin. I've had disasters as well and have blogged about some and others I didn't.
Kathryn - I also prefer the low sugar/low fat muffins but they are really hard to get right. THe maple syrup is great...not that strong but you can tell it's there.
These look great! I love muffins. When I bake a batch, I end up eating them for every meal of the day :)
Becky - If you did that with these you'd be sure to get some good fiber for the day! :-)
These look good. I may have to bookmark this post.
