After our little breakfast in Sunday School, we had a fellowship at lunch. I don't think that was scheduled very well but that's how it worked out! Anyway, I signed up to bring a salad and thought that since it is October, I should make something fall-y. I decided that I would use apples, walnuts, and cranberries! This salad turned out SO good, I think I'll make it again for myself! Thank goodness there were leftovers just enough for lunch on Tuesday!
Fall Apple Salad
1/2 bag spring mix salad greens
1/2 bag Mediterranean salad greens
1 Gala Apple, chopped
1 Granny Smith Apple, chopped
1 small bag chopped walnuts
Craisins
shredded carrots
mushrooms
Place greens in a large bowl. Add apples, walnuts, craisins, carrots, and mushrooms. Use your judgement and tastes to decide how much carrots, mushrooms, and craisins to add. Choose a salad dressing or oil/vinegar and enjoy! Top with chicken, turkey, or shrimp for a complete meal!

I had never thought of adding dried cranberries to a salad. YUM! Looking forward to adding this to my rotation of "healthy" foods ;)

VC - The cranberries are GREAT! They add sweetness and a little tart. I love them, especially with some nuts added. Definitely healthy.

Looks yummy to me too! I always add craisins to my salad, but have to leave out any fruit (the hubby won't touch it).
What kind of salad dressing did you use? We've been using a bottled one lately, but I have a maple mustard one I tried recently and really liked :)

Stacy - I LOVE adding Craisins. They give sweetness and tang. I like using Italian dressing.
Alicat - It is very refreshing! I decided after making this that I really like the sweet and tang that the different apples give. I hope that your sister's party is a hit!
