Baby Sweets!

I have been working nights this week in labor and delivery. Last night I finally delivered a baby!!! It was pretty neat and I hope I get another chance to do it tonight. Anyway, thought I'd leave a little sweet recipe for you before I go to work. A couple of weeks ago, we had our Pediatric Interest Group fundraiser. I made a chess square recipe. This is going to be my entry to Cate's ARF Tuesday. How is the ARF you ask? It has lemon in it which has a lot of vitamin C, which is an anti-oxidant. This is a pretty good recipe and is a lot like those Gooey Butter Cakes that Paula Deen makes, except with about two sticks less butter! Try it out for yourself! Crust:
1 box butter recipe cake mix
1 egg, well beaten
1 stick butter/margarine, softened
Topping:
1 8-oz package cream cheese, softened
2 eggs, well beaten
1-lb box confectioners' sugar
2 teaspoons lemon extract
Mix together crust ingredients until crumbly and press into bottom of a lightly greased 9X13 pan. Beat cream cheese, eggs, and desire flavoring. Add sugar gradually. Pour over crust. Bake at 325 degrees F for 35-40 minutes. Allow to cool thoroughly before slicing.

    Delivering a baby? That's pretty exciting! According to my hubby someone just has to be there to "catch it." lol. He has obviously never had to carry and deal with the stress of it all. Don't you love the way men simplify things?

  5. I made gooey butter cake for a bake sale last night and your recipe is only 1 less stick of butter but that's still a lot less. I will try leaving out the other stick sometime (if I can even eat gooey butter cake again - damn gestational diabetes!)

    Gail - I've actually never had any of the others, so I only know lemon.

    Jane - Thanks! Unfortunately, that's the only one I got to deliver because of complications in others.

    CBJ - I couldn't remember exactly how much she used but I knew it was more than I wanted to use! I hope you diabetes resolves with the addition of your precious baby. :-) You'll just have to make up a diabetic version if not...make us all healthier.

    Anne - All the ones I was at were neat, but actually being the one to hold that baby first was awesome...my hands were shaking after that!

    Kristen - Awww...thanks! I had to be a little firm with this girl but I think hearing "Yeah it's hard but you can do it...you're gonna do it" convinced her. :-)

    I love gooey buttercakes, but I thought they were a philadelphia thing....

  12. Marye - I don't know where they originate but they're great. As to the baby, I want to deliver another but don't know if I'll get to.

    RDM - It was so exciting...unfortunately, unless someone has a baby in the plane I'm riding in, I don't know if I'll ever get to deliver another one.
