Coffee Cake or Muffins...How about BOTH!

Who better to try a new recipe on than a hungry, tired, frustrated, on call medicine team?! I mean, even if it's bad, they'll eat it, right? Before Christmas, I made some muffins for my team when we were on call on a Sunday. I decided to make these cinnamon muffins that I found on Nic's old site. These were very coffee cake like and yummy. Because cinnamon is so good for your heart and is an anti-oxidant, this is my entry to Sweetnick's ARF Tuesday. 2 cups all purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 cup sugar
1/2 cup brown sugar
1 large egg
3 tbsp vegetable oil
1 tsp vanilla extract
3/4 cup buttermilk
1/4 cup brown sugar
1/2 tsp cinnamon

Preheat oven to 400F. Spray muffin cups with cooking spray (or use paper liners). In a medium bowl, whisk together flour, baking powder, baking soda, salt and cinnamon. In a large bowl, whisk together sugars and the egg until smooth. Beat in vegetable oil and vanilla. Working in 2 or 3 additions, alternate adding the flour and the buttermilk to the sugar mixture, stiring until just combined.In a small bowl, stir together remaining brown sugar and cinnamon. Fill each muffin cup about 1/2 full. Sprinkle with a scant 1/2 tsp of the brown sugar mixture into each cup. Evenly divide remaining batter on top and sprinkle with remaining sugar mixture.Bake at 400F for 15-18 minutes, until a tester comes out clean.Transfer to a wire rack to cool completely before eating. I made 12 muffins, but the original recipe suggests only making 11 unless adding nuts or fruit.

  1. I really want to try this, my only problem is that I have to get out to get some buttermilk. I have a tendency not to use recipes with buttermilk, because I never have it in the house.

  2. I didn't know that cinnamon is good for your heart - I'm glad I love it and add it to many things! These muffins look wonderful!

  4. I have no problem getting enough cinnamon in my diet! I love it. I'm glad it's so good for me.

    You know what? I never make coffee cake. I always make dessert-cakes. How wrong is that?

  6. Linda - You can make these even without buttermilk as long as you have milk and vinegar. I think it's 1 cup milk to 1 Tablespoon vinegar. you can find the for sure substitute on line.

    Deborah - Yep it's good for the heart...unfortunately, they say for the REAL benefit you have to have something like a teaspoon everyday!

    Annie - Great to put what we love together, right?

    Emiline - I love cinnamon, too! I like putting it in all my baking and even put it on top of my yogurt in the morning. I rarely make any kind of cake because it makes so much...only when I have somewhere to take it, do I make it!

  9. EMD - I just love using buttermilk in muffins and quick breads...yogurt is good, too!
