adapted from Baking from My Home to Yours, Dorie Greenspan
6 Tablespoons unsalted butter
4 oz. bittersweet chocolate, coarsely chopped (I used chocolate chips)
2 cups AP flour
2/3 cup sugar
1/3 cup unsweetened cocoa powder, sifted
1 T baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups buttermilk
1 large egg
1 teaspoon pure vanilla extract Preheat oven to 375 degrees F. Prepare a 12-cup muffin tin with baking spray or muffin cups. Melt the butter and 2 oz. of the chocolate in the microwave (or alternately in a double boiler). Set aside. In a large bowl, whisk together the flour, sugar, cocoa, baking powder, baking soda, and salt. In another bowl, whisk together buttermilk, egg, and vanillla. Pour liquid and chocolate into dry ingredients and stir to blend - do not overmix. Stir in remaining chocolate chips (I added a few extra). Divide batter evenly among the muffin cups - I ended up with enough batter for 14 muffins even after filling the tin to the top. Bake for 20 minutes or until a knife inserted at the center of the muffin comes out clean.
Oooh Claire, I'm going to have to come back and study these recipes more when I get home! I LOVE chocolate and the muffins and those brownies in the previous post look so good....I gotta love anything with chocolate chips or butterfinger in it!

ReplyDeleteI would so love to have a few of these right now. With trying to change my lifestyle over to the diabetic diet, I can allow myself that pleasure just yet. After I get things under control, I might be able to. They look so marvelous.

Paula - Do! They, I think, are more dessert/snack muffins rather than breakfast...my guy friends enjoyed them.
Erika - I never buy baking chocolate (maybe I should) b/c I don't really bake chocolate that much, so I used what I had. Yep! Works!
Linda - I wonder if Splenda would work in these...I guess maybe they have a bit too much butter for right now anyway. Go for it! That's such a healthy lifestyle.
Wow, I wish you knew me and could bake me finals treats. Those guys are lucky! I am such a chocoholic, its not even funny!
