A couple of weeks ago when my Granny died, one of our precious family friends asked if she could come by. When she came in she had a box from a local kitchen store and some fresh blueberries "for me to snack on while I studied." In the box was Rachel Ray's latest cookbook, 2, 4, 6, 8 Great Meals for Couples or Crowds. On the way to TN with my brother, I went through the book and "dog-earred" quite a few recipes. While I was home I tried a couple of them. ONe was the Garlicky Guacamole and Chips. We had chicken fajitas one night and I made this. It was really good. Just a tad lemony, but that may have been because I used RealLemon, which said the juice of one lemon (called for in recipe) was 3 Tablespoons. I don't think that was right! I'll definitely try this again as my entire family liked it, even Philip! Because avacados are so healthful, this is my entry to Sweetnick's ARF Tuesday.
Garlicky Guacamole
Rachel Ray 2, 4, 6, 8 Meals for Couples and Crowds
1 ripe Haas avacado
1 small jalapeno, seeded and finely chopped
1/4 small onion, finely chopped (our onions were rotten!, so I didn't use this)
1 garlic clove, cracked
1 teaspoon coarse salt
Juice of 1 lemon
Halve the avacado and discard the pit (easier than I thought it would be!). Scoop the flesh into a small bowl and add the jalapenos and onions. Chop the garlic and sprinkle it with salt. Use the side of your knife to apply pressure to the garlic and salt, mashing them into a paste. Add this to the bowl, along with the lemon juice. Mash with a fork until the mixture is fairly smooth. Scoop into a serving dish and serve with chips, for fajitas, or some veggies.

ReplyDeleteI love guacamole! I don't make it very often because I can't stop eating it. It's funny because I used to hate the stuff, I'm just glad that avocados are so good for you!

I was definitely eyeing that recipe when I flipped through that cookbook, too! It's similar to the one I usually throw together, except I use lime instead of lemon and tabasco instead of the jalapeno. I also add a little bit of diced tomato for color and cilantro if I'm in the mood. It's the only recipe I know by heart!

ReplyDeleteWe're going to have steak fajitas tomorrow night and guacamole with chips. I can't wait, yum-o! Mine won't look nearly as pretty as yours though, love how you scooped it back in an avocado half. Mine is served in the mixing bowl, hehehe!
I LOVE guacamole! But almost never make it, guess I should give it a go....your recipe looks pretty easy. And the dinner looks great.

Erika - I understand...but hey, serve it with veggies and you get your vegetables and good fat. Funny thing, I like guacamole but don't really like plain avocados.

Abby - I've heard of turkey and avocado sandwiches but I don't like plain avocado. As to the tea, I've tried and tried but just can't do it!
Madeline - Yum...lime! My dad would really like that. I can't wait to try out more recipes from that book. There were some really good looking ones.
Daddy - yeah, I just forgot to specifically talk about that, but you're right, the jalapenos definitely added to it.
Stacy - You should try making this. It was SUPER easy. I thought of putting the dip in the avocado as I was scooping it out. How easy and cute was that?
Gail - I had never made it either. It was super easy and, I think, better than the store bought stuff.

Helene - I don't know if I'm strange or not...I like guacamole but don't really like avacados alone. Maybe a texture thing. What did you use the sweet cream for? Sounds interesting.

ReplyDeleteI love guacamole too, both my hubby and I do, and whenever I make it, we often fight over it. Silly huh? I love using fresh lime juice and zest in mine. The tang is terrific!
